First time trying this. It is a lean meat and not much fat at all. I put some nashville hot dry rub seasoning in mine and it was pretty good. The brisket is still my favorite by far though. Just depends on what you like,I didn't know that this was pork or I wouldn't have bought it. I've been trying to wing myself off of pork since God says not to eat it in the book of Leviticus. So like I said just depends on who you are and what you like. This was pretty good so I can't complain but I like the beef brisket and beef ribeye and NY strip the best but the brisket is my favorite. It has more fat than all the other cuts which gives it a phenomenal flavor and the fat has like a bacon type of taste and crisp to it that melts in your mouth. But back to the iberico coppa it good just doesnt have alot of fat at all. It very lean which I know alot of you like.

This is my absolute favorite. I've stalked and emailed the company almost begging them to bring it back and the very second they did, I put 3 bags and 2 of the Wild Boar in my cart until the inventory ran out. They re-uped a week later and bought 2 more Iberico Coppa's. Immediately plan on buying more before inventory runs out and I'm without again. Been a fan amd loyal customer from the beginning and I love it here.
